FALL SHIPMENT RECIPE

Apple Grilling Sauce Pot Roast
INGREDIENTS

8oz of La Provencale Cellars Apple Grilling Glaze, separated 3oz and 5oz
(In this month's shipment)

3.5 lb chuck-eye roast
½ tsp Fleur de sel
Freshly ground pepper to taste
2 tsp Extra Virgin Olive Oil
1 medium onion, chopped
1 stalk celery, chopped
1 medium carrot, chopped
1 14oz can diced tomatoes
1 clove of garlic
½ cup chicken broth
1 tbsp of Apple Cidar vinegar
½ cup robust dry wine

DIRECTIONS

Preheat oven to 300 degrees F

Rub Roast with salt and pepper. Heat olive oil in Dutch oven over medium heat

Brown. Roast on all sides, about 10 minutes. Remove to large plate and set aside.

Add onions, celery and carrots, stirring often, until vegetables begin to brown. Add tomatoes and garlic, cook about 45 seconds. Add chicken broth, vinegar, and red wine. Scrape pan bottom to loosen brown bits.

Add pot roast and juices (if any) back to mixture in Dutch oven. Bring liquid to simmer. Stir in 3oz of grilling glaze and cover pot. Transfer to preheated oven for 3 ½ hours. Turn roast every 30 minutes.

Transfer roast to carving board and tent with aluminum foil.

Warm remaining 5oz Grilling Glaze on stove top or in microwave.

Barrels
This is a special opportunity to put wine in your future. Purchase your own personal barrel at Potomac Point Winery. There are a limited number of wine barrels available each year.

Here's how it works.
  • Cost is $900.00 plus tax
  • Specially crafted barrels with the winery name & detailing
  • Etched plaque with your name or personal dedication
  • Barrels will be filled with the year's grape harvest in September
  • Special Barrel Dedication Day at Winery
  • Annual Spring Barrel Tasting from yours and other barrels each year for 4 years as the wine reaches maturity before bottling, starting in 2010
  • You may choose Red or White wine
  • Receive a case of wine (Red or White) from each vintage year after bottling, total of 4 cases. First case  November 2010(2009 Vintage), remaining cases in 2011 Date TBD(2010 Vintage), Date in 2012 TBD(2011 Vintage), Date in 2013 TBD (2012 Vintage). Approximately $225.00 value per case; total of 4 cases. Check the event calendar for updates!
  • You get to keep the barrel after the last bottling in September 2013

Cadus
Tonnellerie Cadus is located in Ladoix-Serrigny, just north of Beaune. Cadus was created to meet the increasing demand around the world for Ultra-Premium barrels using Burgundian firing techniques. Cadus is managed by Francois "Paquito" Barbier, who oversees over 30 experienced coopers.
Damy
Tonnellerie Damy is a third generation cooperage in Meursault, which is managed by Jerome Damy. Jacques Damy, Jerome's father, is Administrator of Les Tonnelleries de Bourgogne, which oversees Tonnellerie Damy and Tonnellerie Billon's operations. The Damy barrels are well known around the world for aging some of the great wines of Meursault and Puligny Montrachet.
KeyStone
Keystone Cooperage, a subsidiary of Wilson Forest Products Inc., is a family owned and operated cooperage located in the heart of the northern Appalachian Mountains, in Jefferson, Pennsylvania. Keystone applies three generations of expertise in oak sourcing, seasoning and manufacturing to its top quality American oak barrels.
Vicard
Vicard Tonnelleries is a family owned and operated cooperage in Cognac with an annual production of over 60,000 French, Eastern European and American oak barrels. Their barrels are sold all over the world and are especially in demand by producers of red wine, particularly Merlot, Cabernet Sauvignon and Cabernet Franc.
